Pine Valley is first a working organic farm, and then a homestay. Our fields, orchards, cows, mushrooms, and bees shape everything you experience here—from the food on your plate to the stories we share around the fire. In the high-altitude soil of Binsar, we grow slowly, honestly, and in partnership with the land.

Rare Roots of the Himalayas: Kaali Haldi & Kaala Adrak

In our highest plots, we grow two of the Himalayas’ most prized medicinal crops: Kaali Haldi (Black Turmeric) and Kaala Adrak (Black Ginger). These are not just “exotic ingredients”—they are part of local healing traditions and mountain wisdom passed down through generations.

Kaali Haldi (Black Turmeric)

Grown in rich, high-altitude soil, our black turmeric is known for its deep color, earthy aroma, and powerful antioxidant properties. We use it in teas, infusions, and traditional home remedies, and we’re happy to share the stories and science behind it when you visit.

Kaala Adrak (Black Ginger)

Kaala Adrak is a warming root celebrated for its digestive and energizing qualities. On colder days in Binsar, you might find it in your cup, in your food, or simply in the conversations we have about how mountain communities stay healthy and strong.

Orchards of Apples, Peaches, Plums, and Apricots

Our farm is ringed by orchards that change with the seasons—pink and white blossoms in spring, fruit-laden branches in summer, and golden light on quiet winter trees.

  • Apples – Crisp, sweet, and shaped by cool mountain nights.
  • Peaches – Juicy, fragrant, and often eaten sun-warm straight from the tree.
  • Plums – Tart-sweet bursts of flavor that make their way into pickles, jams, and desserts.
  • Apricots – Delicate fruits we enjoy fresh, dried, or turned into simple, homemade preserves.

We follow the natural rhythm of the hills, so what you taste and see will depend on when you visit. Sometimes that means baskets of fruit; sometimes it means pruning, mulching, or simply watching the trees rest.

Our Himalayan Cows: At the Heart of the Farm

Our Himalayan A2 cows are not “assets” on a balance sheet—they’re at the heart of how we live and farm. Their presence shapes the energy of the place, the fertility of our soil, and the nourishment on your plate.

  • Traditional, cruelty-free care: Our cows are raised with respect, space to move, and time to graze. We follow slow, traditional methods that prioritize their well-being over output.
  • A2 milk & ghee: The milk from our indigenous cows is rich in A2 protein, long valued in Indian homes for its digestibility and nourishment. When possible, we use it for chai, curd, and ghee that guests may enjoy during their stay.
  • Organic manure for the fields: Their dung is as valuable as their milk: we use it to create organic manure and compost that feeds our fields, orchards, and vegetable beds—closing the loop in a natural, sustainable way.

If you’re up early enough, you can meet the cows, watch the morning routine, and see how an old relationship between farmer and animal still survives in the hills.

Mushrooms & Bees: Quiet Workers of the Farm

Indoor Mushroom Units

In carefully controlled indoor units, we grow a variety of mushrooms that thrive in our cool climate. This allows us to harvest fresh, chemical-free mushrooms regardless of the season outside.

  • Grown in clean, monitored conditions
  • Harvested at peak freshness for our kitchen
  • Used in simple, hearty dishes that let their natural flavor shine

Guests are often surprised at how different truly fresh mushrooms taste from what they’re used to in the city.

Bee Farming & Forest Honey

Our bees move between wildflowers, farm blossoms, and nearby forest flora, creating pure, unadulterated honey that captures the changing seasons of Binsar in every jar.

  • Hives are managed with care to keep colonies healthy and undisturbed
  • Honey is harvested thoughtfully, ensuring enough is left for the bees themselves
